I'd also add that which method of casting off you use depends on the project you are making. It will differ from project to project. Just double check the instructions for that particular item you are making.

There are a number of great videos on Youtube.com that have really easy to understand tutorials on how to cast/bind off! I especially like "TheKnitWitch". Her videos are really easy to understand and she goes nice and slow and repeats. hope that helps! Good luck and happy knitting!
